Guava Delights

Ingredients:
  • 1/4 pound butter
  • 2 tablespoons vegetable oil
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 pound guava paste, cut into 16 slices 1/2 inch to 3/4 inch thick
  • 1/2 teaspoon vanilla
  • 2 cups self rising flour
  • Grated whole lemon peel
Preparation:
Preheat oven to 350 degrees. Grease an 8x8x2 glass baking dish. Cream butter, vegetable oil, and sugar until light and fluffy. Sift together flour, baking powder, and salt. Mix well. Add to butter and sugar mix. Add eggs one at a time and mix. Add vanilla and grated lemon peel. Spoon half of batter to line baking dish. Top with guava paste slices. Cover with remaining batter. Bake 35 to 40 minutes or until golden brown. Calorie free. Guaranteed!
